Peanut Butter Banana (Green) Smoothie


I have no idea how many green smoothies I've made during the past 5 years, but I haven't found a combination that's more kid-friendly than this one.

In the words of my girls, "it doesn't taste green". (They consider this a compliment.)

Which makes it an IDEAL first green smoothie for the smoothie newbie, and for children.

This smoothie gets its pretty light green color from mild-flavored spinach, which is basically undetectable in the smoothie's flavor.

What you CAN taste is a super creamy peanut butter and banana smoothie that is reminiscent of a milkshake. It gets extra thickness from rolled oats, which also make it extra filling and satisfying.

This smoothie makes a balanced breakfast that can be enjoyed on the way out the door -- or in the car on the way to school on those days we don't quite make it to the bus stop on time.

Hey, it happens.

The recipe makes about 4 cups. 1 cup seems to be enough for kids and up to 2 cups for peanut butter and banana loving adults. (Like me!)

It also makes a delicious smoothie bowl, topped with extra bananas, coconut, cocao nibs and peanut butter powder.

Peanut Butter Banana (Green) Smoothie

Makes 4 cups

2 frozen bananas, cut into 2" pieces

1 TB peanut butter (or other nut or seed butter)

1/2 cup rolled oats (gluten-free, if desired)

2 C baby spinach

2 C plain, unsweetened almond, coconut or other plant milk

Put the ingredients into a high speed blender in the order they are listed.

Blend on medium-low and then gradually bring it up to high speed.

Stop and scrape down the sides of the blender, as needed. Blend until smooth.

NOTE: If you don't have a high speed blender, you can use a regular blender. In this case, blend the spinach and almond milk together on high until no pieces of spinach leaves remain. Then add the remaining ingredients and blend until smooth.
